This whiskey is made in Louisville, Kentucky, with a base of rye from local farms that is sheared to maximise the extraction of the grain's flavours. The distillate is casked at 51.5% alcohol by volume instead of the more usual 62.5% in order to obtain more sweetness and richness in the mouth. A new American white oak barrel toasted progressively until charred is used for maturation. Each barrel can bring different aromas and it is only after a minimum of 2 years of maturation that it can be selected. For bottling and to highlight its quality, this whiskey is chill-filtered without the use of charcoal.
