This rum from Haiti is produced exclusively from freshly crushed sugar cane juice from a variety unique to Haiti called “Madame Mevs”. The juice is added with the same yeast used by Barbancourt for 150 years and ferments for 3 days to reach an alcohol volume of 7% which is then distilled in 3 column stills heated with the residues of sugar cane (called “bagasse”). This rum is then aged for 8 years in French Limousin oak barrels.
