Ailsa Bay is a young distillery created in 2007 on the same site as the Girvan distillery in the Lowlands. Being so young allows the distillery to focus on the latest technologies that it highlights by specifying not only the peat indicator (22 pppm), measured before bottling for more accuracy, but also the sweetness indicator (19 sppm).This whisky shows thus a perfect balance between peat and sweetness. The aging process, called micro maturation, occurs first in small casks of 25-100 liters ex Hudson Baby Bourbon for 6 to 9 months before the whisky is transferred for a few more years into virgin, first-fill and refill American oak casks.
