When researching climatic similarities with Scotland, Masataka Taketsuru founded the Yoichi distillery, near the coast on the island of Hokkaido. An old-fashioned style distillery that still uses direct coal heat for the stills, improved with special filters to reduce the environmental impact. It also stands out for partially using virgin oak for the maturation of the whisky. This single malt represents the style of the distillery, made with whiskies of various ages, it’s fruity with a spicy touch and a hint of peat and iodine.
